I found this recipe on an old bit of paper in a book I was given, so I gave it a try. Very nice texture on the second day. The first day it was a bit too soft and a bit crumbly .cream 1/2 a pkt of butter 2 cups of sugar add 4 eggs [1 at a time] grated rind of 2 lemons 1 teaspoon of lemon essence 3 cups of self raising flour alternately with 1 cup of milk
divide between the 2 tins bake 3/4 of an hour @ 170 deg C. drizzle over 1/2 cup of sugar dissolved in lemon juice as soon as they come out of the oven Best made the day before you require them

Pickles what sized tins did you use? l have 2 lemon trees groaning with fruit so would like to use some up
