Fruit mince shortcake

Does anyone have a recipe to use fruit mince other than in Tarts?

Old recipe I make at Xmas, in ozs sorry
Fruit mince shortcake, make in food processor.
Preheat oven 180c.
4oz butter, 4oz sugar, 7oz flour,teaspoon baking powder,1egg. Teaspoon vanilla.
Cream butter and sugar, add egg, vanilla, add flour pulse till dough forms.
Lay down a piece baking paper, sprinkle with flour, roll out shortcake fairly thin, spread half with fruit mince, now carefully flip other half on top trim edges and slide paper off board onto a baking tray, cook till golden and cook. Cool a little cut into squares, before serving sprinkle with little sifted icing sugar.
Tip. Depending on egg size used if to dry add little milk to get to dough ball to roll out if needed.
I just use purchased fruit mince, sometimes add grated apple and few spices if it needs a bit more zing.

Buy some of those frozen sweet pastry sheets. Spread some warmed Christmas mincemeat on thinly and roll up like sausage rolls. Put in freezer for 15-30 mins to firm up. Slice thinly like pinwheels and bake till pale golden but not brown. Serve sprinkled with icing sugar. Easy and delish!
