many years ago I made this jam, using dried apricots and chopped pumpkin. They had to soak together for a few hours beforehand. It was a lovely jam. The pumpkin of course gave it a vibrant colour. I guess the pumpkin was used to make the jam go further, and would be cheaper.
oh my gosh, i bought a jar of this years ago at a market at Papamoa, and have been wondering all this time for a recipe. thanks ever so much. it was devine.

I appreciate the links & thanks rovertniloc for asking. I always make cookessentials Moroccan apricot jam recipe, & it's the best ever, but it disappears rather fast & this is worth a go, until next Apricot season.

I made this yesterday but it had not set well. Today I tipped the wretched stuff back in the pan reboiled it and added a sachet of the Kings setting stuff and it looks a lot better now.
