l had a piece of this today and it is so nice it has a base then l think and caramel filling then on top is a coconut mix something like Louise cake but different Does anyone have a nice recipe they would kindly share please
I often make this coconut meringue slice which is very nice. You could try putting canned caramel onto the base before topping with the meringue, then bake as stated in the recipe. I have C&P'd the recipe for you
Coconut Meringue Slices Makes 12 75 g (3 oz) margarine 100 g (4 oz) caster sugar 2 medium egg yolks 2 x 15 ml spoon(2 tbsp) milk few drops vanilla essence 175 g (6 oz) Self Raising Flour pinch salt TOPPING: 2 medium egg whites 100 g (4 oz) caster sugar 50 g (2 oz) desiccated coconut chopped cherries and nuts
Heat oven to 160ºC, 325ºF, Gas Mark 3. Grease and line a tin 28 x 18 cm (11 x 7 inch). Cream margarine and sugar, beat in egg yolks, milk and essence. Fold in the flour and the salt and spread in the tin. Beat egg whites stiffly, fold in sugar and coconut. Spread mixture over base and sprinkle with cherries and nuts. Bake for about 45 minutes. Cut into slices when cool.

Thank you all for your lovely recipes but l managed to get the recipe it is from a Taste magazine so l have typed it out below l haven't proof read it so sorry for any mistakes but in a rush
Caramel coconut macaroon slice
1 ½ cups flour ½ cup icing sugar 150g cold butter, cubed
Topping
3 eggs ¼ cup milk 50g butter, melted and cooled 1 teaspoon coconut essence ½ cup caster sugar 1 cup brown sugar, well packed 1 tablespoon cornflour 1 ½ cup thread coconut, lightly toasted
Oven 180 C Line 17 x 27cm slice tin leave overhang on all sides
Place flour and icing sugar in food processor and sift together Add cubed butter and process until it resembles fine breadcrumbs Press evenly into tin Bake for 25 minutes or until golden brown Remove from oven and reduce temperature to 150C
To make topping lightly whisk eggs Whisk in milk,butter and coconut essence Add the sugars, cornflour and toasted coconut and stir to combine Pour over prepared base Bake for 50 minutes or until topping is golden brown and set Remove from oven and cool in tin Lightly chill in fridge to make cutting easier

I made this today. Just far far to sweet and a little too much coconut having it in the base and top.
