Hi All. I have been trying to find a recipe for this but all the cheeses I have never heard of. think the recipe was from States. Anyone made some that was a hit please? Thanks

A lot of American cheese sauces for nachos etc use velveeta cheese. The nearest equivant over here are the packets of processed Kraft cheddar ( found on the shelf and not the chiller). This cheese is awful " not real" stuff, but it melts down and makes a great dipping sauce ( a la queso blanco)

It is a Californian white cheese made from cows milk.
You could try and google " what can i use instead of monterey jack cheese" and you will find lots of substitutes.
