Apricot and Caramel sauce pudding

I read in the doctors rooms, a recipe for Apricot and Caramel Sauce pudding by Julia Le Clerc. Has anyone got the recipe from this magazine as I would like to try it. Thanks Vicki

Hope this is the right one - the fantastic thing with smartphones - I now take a photo of the recipes I like in waiting room magazines :)

Apricot and Caramel Sponge Pudding

1 cup SR Flour
1tsp ground cinnamon
3/4 cup firmly packed brown sugar
3/4 cup diced dried apricots
25g butter melted
1/2 cup milk
CARAMEL SAUCE
50g butter cubed
1/3 cup firmly packed brown sugar
1 cup cold water

This gooey caramel self saucing sponge pudding, studded with dried apricots is everything a good pudding should be.Be sure to serve it hot from the oven while the caramel sauce is is still nice and runny.

1.Heat oven to 180C. Grease a deep sided 1L capacity ovenproof dish with butter.Combine flour, cinnamon, sugar and apricots in a bowl and make a well in the centre.Pour butter and milk into the well and stir just enough to combine.Spread batter into prepared dish.
2. To make the caramel sauce, melt the butter in a saucepan over a low heat.Add sugar and water and stir until sugar has dissolved.Pour sauce slowly and carefully over the batter in the dish.
3. Bake for 45 mins or until the mixture is firm in the centre.serves 8
