Can someone please tell me what im doing wrong! Im trying to make Russian fudge for tomorrow and the sugar wont disolve in the milk. Two failed batches and I do not want to let this get the better of me! Please help .

I haven't had that problem, but it does take some time for the sugar to dissolve. I usually put the sugar & milk into the pan & slowly heat it (covered) stirring occasionally - patience is required. The best fudge comes from taking time with this step before adding the condensed milk, butter & golden syrup. Good luck. (You can use the microwave to melt the sugar into the milk)

If it goes sugary while you are beating it, you are probably boiling it too hard, and stirring too much.If you mean it's not dissolving when heated, then I have never heard of such a thing

Sugar will crystalise if stirred while heating when making fudge. try bringing it to the boil on a low heat.

Use caster sugar, it dissolves far more quickly.
