Braise or casserole at gentle heat for about two hours.

This is the eye of the chop.Fry or grill for about 3-4 minutes each side if frying and rest forth same length of time or a little longer if grilled or bake for 30 mins in the oven at 175 degrees.A little bit pink is good for it to stay moist and tender or the same way you prefer beef steak.

4 PORK chops
1 apple peeled and coarsely grated
1tbsp honey
1tbsp grain mustard (I use dijon mustard)
4 sage leaves
220gm grated cheese such as cheshire or cheddar

Preheat oven 180C

On baking tray place 4 pork chops, season with S&P and a sage leave.
In bowl mix apple, mustard, honey and spread evenly over chops.
Grate the cheese over the topping.
Cook for around 15 - 20 minutes until the chops are cooked through and the topping is is bubbling.

Very easy to prepare and cook.
Only fault is you don't get any crackling but the taste makes up for it.

Pork sirloin comes from pigs that are 18-22 weeks old and therefore there is no reason for them to be tough other than overcooking making it dry and tough.

Put thick pork steaks in the Crockpot with orange juice and worcester sauce, had them with green beans and nice carrots from the garden, yum for a cool nights dinner.
