Sophie Gray’s QUICK FLAKY PASTRY This recipe requires frozen butter – ½ hour in the freezer wrapped in foil is usually sufficient. 1 heaped cup flour pinch salt 175g frozen butter cold water to mix
Sift the flour and salt into a big bowl. Dip the block of butter into the flour to make it easier to handle, then grate it into the bowl using a cheese grater.If it gets a bit sticky , dip it in the flour again.Gently fork the butter through the flour.Add just enough water to form a dough.Use your hands to bring the dough together into a ball and pop it into a bag to chill in the fridge until you are ready to use it.Try to chill it for at least 20 minutes before rolling as this helps stop it shrinking during cooking.:-))
