from another thread;If it is from New World it will be fine, they don't sell the other stuff. I make chicken patties with spring onions, grated ginger and lemongrass. It is also nice in a canneloni. Cook finely chopped onion and garlic in a little oil (I think peanut is nice with chicken), add the chicken mince and cook, then add a splash of white wine (if you have/like it) and a little tomato paste and any herbs you like, I use lemon thyme. Stuff the tubes and make a tomato sauce (onions, garlic, tin of tomatoes and seasoning) pour this over the tubes, make a white sauce with a little parmesan mixed in and pour this over the red sauce and sprinkle more parmesan over and bake. I buy fresh lasagna sheets rather than the dried tubes because they are easier to stuff.

Chicken Croquettes

80g butter or marg
small onion finely chopped
1/2tsp dried thyme1/2tsp dried oregano
2 cups finely chopped cooked chicken (can use chicken mince, just cook for an extra 2 minutes approx)
2 T flour
2 T chopped parsley
1 T french mustard
1 t salt
pinch black pepper
2 tablespoons milk
1 egg lightly beaten
1/4 cup grated Parmesan cheese

Melt 30g of the butter in a large heavy frying pan. Add the onion and cook over moderate heat until soft- about 5 min. Blend in the thyme and oregano and cook 1 min more. Stir in the chicken, flour, parsley, mustard, salt, pepper and milk and cook for 3 min. Remove the pan from the heat and stir in the egg and cheese.

Pour the mixture into a buttered medium sized dish spreading it evenly. Chill in the freezer for 15 min or until stiff enough to shape

Take the dish from the freezer and shape into patties

Melt the remaining butter in the pan over moderately high heat and brown the croquettes for 3 to 4 min each side.

Cocktail Meatballs

1 pound lean ground beef (can use chicken mince)
1 egg
2 tablespoons water
1/2 cup bread crumbs
3 tablespoons minced onion
1 (8 ounce) can jellied cranberry sauce (optional)
3/4 cup chili sauce
1 tablespoon brown sugar
1 1/2 teaspoons lemon juice
In a large bowl, mix together the ground beef, egg, water, bread crumbs, and
minced onion. Roll into small meatballs. Bake at 350F for 20 to 25 minutes,
turning once. in alarge saucepan over low heat, blend the
cranberry sauce, chili sauce, brown sugar, and pour over meatballs .

can be eaten cold

Ginger Chicken Bites
1tsp Oil, 2 spring onions, finely sliced, 1 crushed clove garlic, 1tsp grated fresh ginger, 350g minced chicken, 1Tbsp parmesan cheese, 1Tbsp chopped parsley, 1cup cooked (brown) rice. salt and pepper to taste. Method: Heat the oil and gently fry the onions, garlic and ginger until soft. In a bowl, combine the rest of the ingredients, add the onion mixture to this and mix well. Season with pepper and salt. cover and refrigerate for 30 mins. Roll tablespoons of the mix into balls. bake on a lightly greased oven tray, turning once at 180C for 30 mins. makes approx 20.

Thai Chicken Balls
Makes about 50 walnut sized balls. 1 kg chicken mince;80g fresh breadcrumbs;4 spring onions, sliced;1 tbsp ground coriander;50g chopped, fresh coriander;60ml sweet chilli sauce;1-2 tbsp lemon juice;oil for shallow frying. Mix the mince, and breadcrumbs in a large bowl. Add the spring onions, ground & fresh coriander;chilli sauce & lemon juice, to taste, mix well. With wet hands, form into evenly shaped walnut-sized balls. Preheat oven to 200c.
Heat about 3cm oil in deep frying pan to 180c, or until a cube of bread browns in 15 seconds. Shallow fry the balls in batched over high heat until golden. Bake on baking tray for 5 mins or until cooked through.
