These are popular among my GF friends Lemon Shortbread 250g butter, softened but not melted 1 1/2 cups maize cornflour 3/4 cup rice flour 3/4 cup Chelsea Icing Sugar 1 tsp grated lemon rind Method Preheat oven to 150°C. Mix all ingredients in a food processor until smooth and well combined. Roll dough on a maize cornflour dusted surface to a 1cm thickness. Cut into fingers or press out shapes using cookie cutters. Place on a baking tray and prick with a fork. Bake for 25 - 30 minutes until pale but crisp (longer slower baking is the trick with shortbread). Cool on a wire rack and store in an airtight container. Makes: 35 - 40 pieces
Caramel Biscuits 225 g butter (or dairy free spread). 1 small cup of golden syrup, 225 g Caster Sugar, 3 Cups Gluten free flour, 3 tsp baking powder, 2 eggs, 1 cup sultanas or raisins, 1/2 cup walnuts chopped Soften butter or spread, add sugar and beat well, add eggs and beat again then add golden syrup. Stir in sifted dry ingredients. Put teaspoon lots on baking paper lined tray and bake 10 - 15 minutes at 160c Makes about 60
Chocolate Chippie Biscuits GF 125g butter room temp 1/4c firmly packed brown sugar 1/4c clear honey 1 egg 2 cups gluten free plain flour ¼ cup GF cornflour 1 teas BP GF ½ tea cinnamon 1 cup dark chocolate chips 1/3 cup chopped walnuts (optional) Cream butter, honey & sugar, add eggs then stir in the dry ingredients, chocolate chips & walnuts. Put intablespoon lots on tray, flatten with fork. Cook at 180 for 25 minutes (160 fan) Cool on trays for 5 minutes before putting on rack.

I have just made these for my brother inlaw! first time and they turned out fab:-) 125 gms soft butter 3/4 cup sugar 1 egg 2 cups self raising cluten free flour mix (in a box at new world) handfull of chopped apricots hand full of sultanas 1/2 cup coconut cream butter/sugar add the rest then shape into golf sized balls - flatten slightly with fork. bake at 180 untill golden (this took 25mins!) i asumme due to the flour sub.
