Can you please let me know the recipe for Annabels potato rosti! I saw it on TV last night but forgot to write it down. Also is it good! I am thinking of getting it.

onyxcyrus, the Potato Rosti is actually in Annabel's latest book "Simple Pleasures".
POTATO ROSTI 4 large, floury potatoes 1 tsp salt 3 tbsp olive oil+extra for brushing or spraying 2 tbsp chopped parsley leaves (optional)
Preheat oven to 190°C and line a baking tray with baking paper. Peel potatoes and grate them onto a clean teatowel.Pull up the sides of the teatowel, twist and squeeze tightly over the sink to remove liquid.Place potato in a mixing bowl with salt, olive oil and parsley, if using, and stir to combine.Divide mixture into 6 disc-shaped portions, space evenly on prepared baking tray and squish slightly to spread.Brush or spray with olive oil. Bake until crisp and golden (35-40 minutes). Serves 6 as a side dish.:-))
