Looks yummy - but I'm wondering if I will need to freeze the cake if I want to keep it, or if I can keep it in a sealed container like any good fruit cake without icing.

Don't know Annabels almond topping, but if you mean ordinary almond paste then a fondant covering i usually do it about 1-2 weeks before xmas decorate, don't put it in a sealed container it might sweat, just sit it in the pantry where its cool covered with greaseproof paper, or something light till its time to cut it.
