So I thought I'd try and make some Wine Jelly. I downloaded a recipe off the Net. Simple enough, however, do you think I could find 'Dry Pectin' anywhere. Supermarkets dont have it. Anyway, the closest thing I could find was 'Jam Setting Agent' which has about 9% Pectin in it. So I used it. Big Mistake! It hasnt set! What can I do to make my jelly set!

Without seeing the recipe I have made it in the pastand probably had pectin at the time,The rules are as for making jam.You need acidity (perhaps with the addition of lemon juice), pectin and you need to boil it, not just simmer it.The time may vary a lot.You need to test for setting.Maybe the recipe is just wrong, but even the choice of wine will affect the results.
