Any rich mixed fruit steamed pudding could be divided up into 1 cup portions and microwaved. I am sure they come out like cake as Christmas Pudding can be sliced and servedcold as a cake with a cup of tea or coffee.
Divide a recipe by four or six even to get one or two cup sizes.
