Melt milk, butter and syrup in a small pot. When cold, add soda, whisky or sherry and essences.
In a bowl, mix sugar, flour, spice and fruit.Add milk mixture, then well-beaten eggs. Bake 4 hours at 100-120C.A 23cm square tin makes a good deep cake.
This recipe can be doubled.

Thanks very much. My Aunt always made xmas cakes at xmas & she died just recently and I want to make my other aunties & mum cakes as a surprise.

Heres another - Egglass & Sugarless, used condensed milk!In a large saucepan place: 250gms butter 1 cup water 1kg dried fruit 1 Tbsp vinegar ½ tsp each of nutmeg, cinnamon, mixed spice
Heat until it comes to the boil, then remove from heat, and add: ½ tsp baking soda 1 tin sweetened condensed milk
Stir well, leave to cool.
When cooled, add 1 tbsp ( or so) brandy, sherry or whatever alcohol appeals! (optional)
2 cups flour 1 tsp baking powder 1 tsp each of almond, lemon and vanilla essences (the use of the essences is very important, as they make all the difference to the flavour.)
Mix well, spread in a deep lined 7inch tin.

Warning - the raw recipe is addictive - there is a huge risk the finished cake will be only half size due to too many 'samplings"!
