Gnocchi recipes ?

Hi.Anyone got an easy Gnocchi recipe for someone who hasn't made it before!thanks.

Pumpkin Gnocchi

1 kg pumpkin, cooked and sieved
2 large eggs
salt & pepper
nutmeg
150g flour

Add beaten eggs to pumpkin while still warm, add seasonings and mix well.Cool.Will hold chilled overnight.

Just before cooking bring pumpkin to room temp and gently stir in flour.

Bring large saucepan of water to a simmer, drop in large tsp of mixture.As soon as they rise to the surface take out and drain.

Serve with a sauce made from equal weights of chopped walnuts, butter & parmesan,

Ricotta Gnocchi

Serves 3 - 4


450gms firm ricotta 

1 clove crushed garlic

2 medium sized eggs

1/2 cup freshly grated parmesan cheese

good grating of fresh nutmeg

1/2 cup flour

salt and pepper
 


Place ricotta, garlic, eggs, parmesan and nutmeg in bowl and combine.
Sift over flour and season well with salt and pepper, using a fork mix well.
Tip 1/3 of mixture onto well floured surface/ board and roll quickly and gently into long rope about 2cm thick.The mixture will be sticky; use well floured hands.
Cut into 1cm lengths and place on baking paper . Repeat with remaining mixture.
Cover and refrigerate for an hour up to 24 hours.

Cook in simmering water until they rise to the top - a few minutes.

An intensely flavouredtomato, onion, capsicum and garlic sauce, freshly grated Parmesan on top.

Note that you want to use a floury potato, but boil it only until you can get a skewer through. If you keep them nice and firm you get a good stiky dough and don't have to use egg (which makes it gold standard gnocchi). You only add the egg if the dough refuses to come together.

But yeah, that's a super easy gnocchi recipe. It is time consuming, but really quite satisfying to make, and a great two person job if one person rolls and the other boils them.
