Ginger curd

I have been given a jar of ginger curd which tastes wonderful but what do I do with it.Any ideas please

Ginger curd sounds amazing. I have never heard of it.
I'm going to look up some recipes.

I can taste it folded through whipped cream in a chocolate eclair.Yum.

from one of my fav websites
Ginger curd
125g butter,
100g sugar(jam sugar)
,2 large eggs plus 2 yolks,
50ml syrup from a jar of stem ginger
,7-8 pieces stem ginger chopped
finely,juice of 1 lemon strained
Method
Slowly melt butter, sugar & add beaten eggs.
Stir in the syrup, ginger pieces & lemon.
Stir constantly till it combines and thickens.
Pour into prepared jars and seal tightly.
The curd will thicken as it cools.

best way to do it.
Was given a jar of stemmed ginger for Christmas and wanted to get the best use out of it so made this
May have to get some more stem ginger and make some more, now.

I have just made this, but with lime juice.

It is divine!
For a treat I will make some mini tartlets and fill them and add dark choc ganache.

yum , yum, yum. Great idea with the lime juice. Must compliment the ginger nicely ,not to mention the dark choc, .
