I want to have a go at a rhubarb meringue pudding but haven't got heaps of rhubarb, however I've got some tinned peach slices. Do you think it would work if I mixed them in with the rhubarb, stewed it up and thickened it with a bit of custard and egg yolk then poured it into the pastry lined dish (which I guess I should bake blind first!) and put the meringue mix on top. How hot do I cook that!

Yes bake blind first.
I would use apple or berries with the rhubarb, if you have them. Bake meringue at about 200 deg C for about 10 - 15min
Yum thanks. Yes, I usually put apple with my rhubarb too but have used themup for the apple sauce to go with the roast pork. Darn, knew I should have saved some! Might still try the peaches and add a squeeze of lemon.
