Would anybody have an easy recipe for meatballs using pork mince. I have never used it before but the price was so good I just had to get some. Ive heard that the recipe MIke King had for pork balls is nice but I cant find it anywhere. All I remember on his tv add was he put sweet chilli sauce in it. TIA.

tokokkk, for a choice of pork meatball recipes have a look at:-
I just googled 'pork meatballs' and pork recipes and came up with loads when I did the same thing.But have also just added some cajun seasoning, rolled into balls, and cooked in a little oil.I made them pretty small and they cooked really quickly.Served with mash potatoes and a salad.

I normally just add to the pork mince, crushed pineapple, chilli sauce, parsley/chives, sometimes chopped spring onion, season, roll into small balls (no egg needed to bind), I prefer to bake them, and served with a sweet chilli sauce, yum.

If you enjoy Asian flavours try this:
Pork & Coconut Balls Makes about 30 • 500g minced free range pork • 1 shallot (or 1/2 small red onion) finely chopped • 2 cloves garlic very finely chopped • 2T fish sauce • 2 rounded T desiccated coconut • A few grinds of black or white pepper • 1T peanut oil for frying
• Make the balls by combining all ingredients and mixing very thoroughly with your hands (disposable gloves are a good idea) and forming into bite size balls. • If making for a lunch or main course don't make them any bigger as the interior won't cook through before they burn. • If you have time cover and refrigerate a few hours to firm up. • Fry in a little oil over medium heat, shaking often to cook evenly. • Watch carefully as they won't take long and will burn readily. • Drain on paper towels, serve hot, warm or cold with dipping sauce. If you serve them as a meal, also serve a large undressed salad of soft lettuce and Asian herbs as available e.g. mint, coriander, Thai basil, dill, Vietnamese mint.
Dipping Sauce 1 clove garlic 2-3 fresh red chillies (not super-hot ones) 4-5T fish sauce - 5T fresh lime juice 1T palm sugar
• Using a mortar and pestle or mini-blender pulverize the garlic, chilli and palm sugar 4 tab each of fish sauce and lime juice and combine well. • Taste and correct balance if necessary to make a tart, salty sauce with just a trace of sweetness.

Mike King's was: 500 grms pork mince, 2 grated carrots, 1 tbspn Chilli Garlic sauce OR Chilli sauce plus 1 crushed clove garlic, cup chopped drained apples or peaches,2tbspns chopped herbs (parsley, thyme, sage etc.) Salt and pepper to taste.Roll into 2.5 cm balls and bake at 165o C for approximately 10 minutes.
