just wondering as I have always used beef, but miss 12 ( child you lives with us 5 days a week ) hate beef, so I brought pork mince, was planning on doing it the same way and wrapping in bacon ?

Absolutely. I made a pork mince and sausage loaf for tea last night :)

Pork mince meat loaf. Mix mince with grated red onion, apple and carrot. I used a can of Watties baby apples last time. Fresh breadcrumbs, sage and chopped parsley, a good dash of soy sauce. Season well. Brown sugar, water and soy sauce - or use kecap manis instead and pour over the top. Can use same recipe as meat balls.

The destitute gourmet 's crispy bacon and pork loaf is a real favourite here.
Actually a combination of beef and pork mince is tastier than either on its own. Best meatloaf .
