Want to make some mini patties from pork mince to go in a satay sauce. What herbs and spices should I add to the meat please?

Most satays are made with small cubes of meat, not minced meat, but here's a delicious one from Bali that uses minced pork.
Balinese Satay
12 – 16 pieces
Paste 4 shallots 2 cloves garlic 1 tsp chilli flakes 5 tab thick coconut cream 3 tsp coriander seeds 2 tsp cumin seeds 2 cloves 4cm cinnamon stick ½ tsp nutmeg ½ tsp tumeric 1cm galangal ½ tsp white pepper 4 cm lemongrass 2 tsp shrimp paste 2 tab oil
2 tab oil 1 tsp salt 450g minced pork juice 1 lime
Pulverise paste ingredients, fry in 2 tab oil until fragrant.Add salt and cool.
Mix paste with pork and lime juice, form into sausages around satay sticks.

If you are putting into satay sauce I don't think you need to add any herbs or spices to the pork, maybe a little precooked finely chopped onion for a bit more body but I would just roll the pork into small balls, brown in peanut oil first then add.

No I had some pork mince to use up and since Satay sauce is low carb and hubby is a diabetic I thought I would turn the mince into patties and add them to satay sauce and the vesges. I wanted some complementary flavourings to go into the mince. A kind of delicate but distinguishing flavour to not conflict with the satay sauce.
