Apricot danish pastries just make a sweet pastry, roll it out cut into squares dollop jam in the middle and fold each corner into the middle then bake in medium oven, serve hot with vanilla ice cream and/or whipped cream.

Tasty Pork Fillets (or Chops)Saute 60g butter, 2 onions, add 2tsp curry powder, 2 tsp ginger, 2 tblsp soya sauce, 2 tblsp apricot jam, 1 tblsp lemon juice. Simmer til jam is dissolved. Slice port fillets at an angle about 1" wide. Place in single layer in greased casserole dish. 25 mins in mod. oven.I serve it with brussels sprouts ( 2 mins per serving on high in mike, add butter, roll in nutmeg. Baked potatoes and glazed carrots.They all go nicely together.

Make a pinwheel scone with cinnamon raisins in centre. Place in a baking dish, pour over a mixtureof brown sugar, apricot jam, golden syrup & a little butter. Bake for a winter dessert, yum!

APRICOT CINNAMON SCONE ROUND 225g self raising flour ½ tsp salt 1 tsp cinnamon 50g butter 50g sultanas 25g castor sugar 150ml milk 2 TBLSP apricot jam 1 TBLSP brown sugar Egg for glazing
Sift flour with salt & cinnamon into bowl, add butter cut into small pieces and rub in, stir in sultanas & castor sugar.Mixing with a fork add enough milk to make a soft dough, knead gently on lightly floured surface.Cut off half the dough, roll into a round about 12mm thick and put on baking tray, spread this round with jam leaving the edges clear, then sprinkle on brown sugar.Roll the remaining dough to a round the same size, damp the edges of both rounds, cover the jam with the second round and press the edges together.Mark into 8 wedges with a sharp knife. Brush the top with beaten egg. Bake 220C about 20 min until risen and golden, cool on rack

Jam Jar Cocktail 35ml southern comfort 20mil lemonjuice 20mil apple juice 2 tablespoons APRICOT jam 8 mint leaves 15mil sugar syrup Lots of ice Place mint leaves into jam jar gently muddle, place remaining ingredients into the jam jar. Half fill with crushed ice, put lid on jam jar and shake vigorously. Remove lid and top with crushed ice. Garnish with mint leaves.
Best served on a warm sunny day. You can cheat by using a blender if you need to. Enjoy!
