Cookessentials - this comment screams why I left this message boardfour years ago - it was your supposed 'ownership' of this recipe site and your supposed belief that you could dictate what other people posted.This isn't YOUR site or YOUR job to moderate or keep in check what other people write.Post what you want and allow other people to post their own ideas.Visiting this site again after all this time just makes me shudder - your dictating comments for one but also seeing the state of what other people cook and put into their mouths!Avocado dip can contain any rubbish you choose to put in it (as suggested in previous ideas) but gucamole contains only avocado, lime, chilli/tobasco, S&P and coriander (cilantro for those from the states).I think i'll leave this site once more but for good this time and stick to more food purist sites so cookessentials, feel free to moderate me all you want now!

GUACAMOLE WITH PEAR AND POMEGRANATE SEEDS
1/3 cup white onions, finely chopped 3 to 4 serrano chiles, finely chopped, with seeds 1 teaspoon coarse salt 2 pounds ripe California avocadoes (about 4 large) 2 to 3 tablespoons fresh lime juice 3/4 cup pear, peeled and finely diced 3/4 cup seedless grapes, halved 3/4 cup pomegranate seeds
Special equipment: molcajete y tojolote (mexican mortar and pestle) or food processor
In a molcajete or food processor, grind onion, chiles, and salt into a rough paste. Gradually add the avocado, coarsely mashing it (you'll want it to be chunky). Stir in the lemon juice. Fold in the pear, grapes, and 1/2 cup of the pomegranate seeds. Sprinkle remaining 1/4 cup pomegranate seeds over the guacamole and serve.
Makes 8 servings.

Mash an avocado. Add 1/2 c unsweetened plain yoghurt, 1 T tomato sauce, good squeeze of lemon juice, 1 tsp garlic, crushed & a pinch of coriander. Mix well together and serve.

Yuk! Guacamole does not have yoghurt or reduced cream in it! For an authentic recipe it should include:- Onion/Shallots Garlic Lime juice Tomato Cilantro (substitute coriander) Chillie Avocado. Salt and pepper. Nothing else!

Guacamole does not normally contain yoghurt, tomato sauce, reduced cream or soup mix.If you would like to make a simple clean-tasting guacamole try this:
2 ripe avocados 1/2 small onion, grated 1 - 2 hot chillies e.g. serrano, cayenne, jalapeno finely chopped 1/2 tsp salt freshly ground black pepper juice of 1 - 2 limes 1/4 c finely chopped coriander leaves 1 small tomato finely chopped 1 tab good quality olive oil
Mash the avocado flesh in a bowl with a fork - it should not be perfectly smooth.Add the rest of the ingredients, holding back a little lime juice, and combine well.Taste and add more lime juice or salt if necessary to get a balanced flavour.

Forgot the olive oil! That's a good recipe! For maximum effect; chill (especially since guacamole will turn black if not)
Place avocados in bowl, mash roughly with a fork; stir in remaining ingredients
