I have a tub of cream cheese that is nearing expiry date - any suggestions on recipes... Bangers and Mash tonight for dinner - can I use it in my mashed potatoes maybe? ? ?

TRUFFLES: 250g cream cheese, softened, 2packs choc biscuits (timtams, sqiggles, mint creams, choc wheateans etc), crushed. Combine. I like to dip mine in melted chocolate. They freeze well without going hard - good for Easter weekend coming up! ...

CC is lovely on toast, rather than marg or butter. Then spread your vegemite over it. Or sliced tomatoes, anything savoury really. Don't waste it, it's too damned expensive :-) :-)

Apple & Cream Cheese Muffins
2 Cups SR flour, ½ Cup sugar, 1 tsp lemon rind-finely grated. Mix well. Mix together 2 eggs, 3/4-cup milk, 1 tsp cinnamon & 25 gr-melted butter. Combine wet & dry & mix thru 1 cup diced apple. Spoon into greased muffin tins & top with 1 tbsp cream cheese & sprinkle over cinnamon sugar (1. 5 tsp cinnamon & ¼ C sugar). Bake 180*C for 20 mins. These are YUM!
Apricot & Cream Cheese Muffins
Mix well 2 Cups flour, ½ Cup sugar, 1 Tbsp Baking powder, ¼ tsp salt. Drain & reserve juice of 1x 410 g chopped apricots and add apricots to dry mix with ¼ of each milk & oil, 1 egg, and reserved fruit juice to make sticky dough. Mix & ½ fill mix into greased muffin tin. Place 1 tsp cream cheese in centre & top with more mix to cover. Sprinkle over cinnamon sugar if liked & bake @ 180*C for 20 mins. These are my daughters favourite.
