Does anyone have Nigellas Turkey Soak !

she soaked her Xmas turkey is a spice brine mix over night . does anyone have that mix ! many thanks

Hi from her Xmas book she soaks her turkey in:
6 litres of water
250g Maldon salt or 125g ordinary salt
3x15ml black peppercorns
1 bouquet garni
1x15ml tablespoon caraway seeds
4 cloves
2x15ml tablespoon allspice berries
4 star anise
2x15ml tablespoon white mustard seeds
200g caster sugar
2 unpeeled onions quartered
1x6cm diced ginger unpeeled
4x15ml tablesspoons of maple syrup
4x15ml tablespoons runny honey
stalks from bunch parsley *optional

Glaze: 75g goose fat or butter
3x15ml maple syrup

Thats for a 12LB turkey

Leave it somewhere cold for 2 days.

I'm busy comparing my Turkey Brine to Nigella's and conducting a comparing analysis.

Won't be long.

My recipe: Turkey Brine
4 litres of Water
250gms PLAIN TABLE SALT must not be iodised
125gms Dark Brown Sugar
1 x Bouquet Garni (Pkt of Fresh Meat or Chicken Herbs found in sp/mrkts)
In a Pestle and Morter:
Grind Blackpeppercorns; Cumin Seeds; Caraway Seeds; Fennel Seeds; Juniper Berries;
Crush or Tear with your hands: 3-4 Bay Leaves.

Optional extras: Add 1/2 t dried chilli flakes OR; NOT BOTH; sliced Oranges and Lemons.

Bring all ingredients to a simmer in a very large pot; until the Sugar and Salt are dissolved. Take off the heat and leave to cool OVERNIGHT.

Soak Turkey for no more than 24 hours.

Timeline: Make Turkey Brine on 23 Dec. Soak Turkey on 24 Dec at either 12noon for a Christmas lunch or 5pm for Christmas Dinner.

SOAKING YOUR TURKEY

Find a bucket or container which will fit in the fridge.
Line the bucket/container with an XL -sized Glad Oven Bag.
Place your FRESH turkey neck/breast down into the bag-lined bucket and carefully pour your COLD brine into the bucket.
Gather bag up, twist and tie bag. Place into fridge for no longer than 24 hours.

Brining only works for fresh turkeys. Buying a commerically over-processed/tender basted or any turkey which has a pop-up timer in it, has already been brined and your result will not work.Use Fresh Turkeys Only.

NIGELLA vs ME

Nigella 125gms Salt : Me 250gms Salt
Brined 2 days: Me Brined 24 hours (that is because she uses half the amount of salt).
Maple Sugar; Honey etc and plain sugar : vs muscovado-style sugar - same result, it;s all sugar in the end, but her's is a lot more expensive to buy.
Star Anise = 1/4 t chillie flakes (but these are considered optional).
Leave in the fresh herbs and seasonings.

Overall/Summary: I have swapped out the water on a few occasions for 4 litres of clear apple for EXCEPTIONAL results.
