Lemon curd / honey, not sure if there's a difference! I have Edmonds microwave lemon honey: Place 3 eggs & 1 cup sugar in a 2litre glass jug.Beat until well mixed. Add 50gm butter,1/2 cup lemon juice & 1tsp grated lemon rind. M/wave on high power for 8 minutes, whisking every 2 minutes. Cool for afew minutes then pour into hot dry jars. Seal when cold. Makes 2 cups.

I have just made this but am a little disappointed with it as it is nowhere as smooth as when I make it over the stove. However it still tastes good and no one will notice the texture when it's tucked in the middle of their muffin!

texture better if you microwave only in short bursts eg 30 seconds at a time/

I have made Annabell Langbiens recipe and she says to make it smooth put it through the sieve which makes it yum.do you know if it can be frozen!
