Preheat oven to 160 degrees. Spray 23 cm cake tin Mix all ingredients in a large bowl, transfer to cake tin. Bake one hour then turn oven down to 150 degrees Bake a further 45-60 minutes, until skewer is clean, cake comes away at sides and firm to touch Cool in tin for an hour before turning out onto cake rack.
Make Frosting Beat butter and brandy together with 2 cups icing sugar. Then add as much as needed from third cup to make a fluffy frosting. Ice onto cake. Leave for 3-4 hours for frosting to set before serving I wanted this to Grandma so I googled it.sharing it with anyone else who wants it

gardie by mistake i put in 1 1/2 cups whiskey into the fruit mixture will it make any difference to the mix tia

WOW- just saw this thread.I have just started one with a query on what I could use instead of Drambuie as I don't have enough.I have 42 below, Jim Beam, + Contreau.What could I use!Should I do a mixture.!Advice appreciated please.

I've used Jim Beam in mine as that was all I had.Baked it on Labour Day its all wrapped up in the fridge, awaiting its big reveal

I have my fruit mix soaking in brandy and ginger ale, will finish off and cook on Saturday.
