Will omitting gelatine from a cheesecake recipe make a huge difference to the finished cheesecake. The recipe has melted chocolate, cream cheese and sour cream in it, thanks

you can get a vegie gelatine. Just not sure where you would get it.

it will not set as firm, but will still taste ok, perhaps just add a little more choc and cream cheese, some of the ones I have tasted would have been nicer without the gluggy set that the gelatine gives.
If you are omitting gelatine for vegetarian reasons, its in sour cream.

Use 1t agar powder for a firm set or 1T agar flakes for a wobbly set like jelly. Sets at room temp which is such a bonus.

Can you use guar gum!
