My mother used to not bother creaming if she could get away with it. She liked to just melt butter for biscuit recipes. For example hokey pokey biscuits, a good old cheap standard from the earlier Edmomds books. She melted the butter. The biscuits look different and had a different texture from other mother's versions of the bikkies but they tasted better we thought.
