I made an apple one on Saturday night which was delicious with vanilla bean ice cream. You can make them with pears as well as doing savoury ones so it is a piece of cookware I would use alot.

Why not do as the french do and use a blackiron frying pan?

You can makeindividual "tarte tatins" if you wish. Make the caramel up in a cast iron pot, coat softened apples in the caramel, pile the apples into ramekin pots, top with puff pastry and bake. I will be making some up later, I will try and upload a pic.

I bought a heavy old pan at a garage sale for $2, took the handle off and hey presto - works just fine. Makes a nice big one.
