Love tortilla soup!I have tried many times to recreate one i had in Dodge City, i still dream of it! When i have a whole Sunday to muck around i use this recipe with lots of fresh limey, coriander, avocado goodness. http://thepioneerwoman.com/cooking/2011/01/chicken-tortilla-soup/
When i want to come home to a crockpot full i mix and match this recipe. lean ground beef (how ever much you like, if at all) choppedonion chopped greenpepper 1 canrinsed and drained black beans 1 can diced tomatoes with green chilies( i just add chopped jalapeño ) 2lt beef stock 5 tablespoons chili powder 1-tablespoon sugar 1-tablespoon ground cumin 1 teaspoon garlic powder 1 teaspoon ground ginger. Peel and juice of 1 lime. brown mince, toss everything in crockpot, cook on low.serve into bowls topped with crushed corn chips and sour cream. heaven!

If you use those delmaine? smoked black beans in sauce you might not want to drain them the sauce is excellent

I saw black beans in chili sauce at PaknSave on Tues ... anyone tried them?Are they nice?

Ive never seen them in sauce.As i love black beans i will give them a go when i find them.What kind of chilli?

I love this soup, 2-3 tortillas or wraps cut into thin strips olive oil, smoked paprika. pop the tortilla bits into an oven proof dish and drizzle with a little olive oil and a sprinkle of smoked paprika, and cook in oven until slightly browned approx 10 - 15 min, remove & cool.They should become crispy.
1-2 tbsp oliveoil 1 large onion chopped 3 cloves garlic chopped 1 tsp ground cumin 2 tsp ground coriander 1/4 - 1/2 cayenne pepper (to taste) 1 can crushed tomatoes 6 cups veg broth 1 tin black beans 1 cup corn ( I use frozen) 1 tsp sugar sprinkle of smoked paprika salt & pepper to season
Heat oil in large pot and saute the onion & garlic, with salt. Stir in the spices heat for 1 min then add the tomatoes & sugar. Cook the tomatoes for about 5 min until slightly reduced, add veg stock, black beans, corn & pepper & a light sprinkle of smoked paprika. Simmer for another 10 - 15 min. Adjust seasoning as needed.
spoon into bowls, stir through some fresh coriander, add baked tortillas,a dollop ofsour cream . and some cubed avocado, and if liked a drizzle of chilli sauce for those in the family that like it hotter.
