My dear husband planted 2 plants this year and i am over run with this vege and the kids won't eat it... . recipes please esp anything that can be frozen! thanks! !

Zuccenni slice 4 Zuccennis 1 large Onion 3 Rashers of bacon / or Ham steaks 1c grated cheese 1c self raising flour 1/2c Oil 5 eggs pepper and salt mixed herbs Grate unpeeled Zuccenni, finely chop onion, bacon and grate the cheese. Sift flour and add oil and lightly beaten eggs season with the herbs and mix with a fork. Pour into a well greased tin and bake in a moderate oven (180) for 40mins. Hints garlic thyme and parsley.

Chargrilled courgette and capsicum salad
2 red capsicums
2 tbsp olive oil
2 red onions, cut into quarters
6 courgettes, cut lengthways into strips
1/2 cup breadcrumbs
1 tbsp capers
1/4 cup chopped parsley
1/4 cup oil
1 tbsp balsamic vinegar
1 tsp sugar
1. Cut the capsicums in half and remove seeds. Slice each capsicum half into four strips.
2. Heat grill or barbecue hotplate, drizzle over a little oil, then cook onions until almost tender. Add capsicum and cook for 2 minutes, then add courgettes and cook until lightly browned. Remove veges from heat and set aside.
3. Meanwhile, heat 2 tbsp of olive oil in a frying pan. add the breadcrumbs, capers and parsley and cook until golden.
4. Arrange grilled vegetables on a plate. Combine oil, balsamic vinegar and sugar and pour over the vegetables.
5. Sprinkle over the breadcrumb mixture.

Chocolate and Zucchini cake. (I kid you not... . very yummy, and the kids would never know it was there). Grate it into quiches, grate and squeeze and use as a base for fritters. Zucchini relish.

125g butter
1 c brown sugar
1/2 c white sugar
3 eggs
2 1/2 c flour
1/2 c yogurt
1/2 c cocoa
2 t baking soda
1 tsp cinnamon
1/2 tsp mixed spice
1/2 t salt
1 t vanilla essence
3 cups (350g) grated courgette
1/2-1 c chocolate pieces (optional)

Line 25 cm square tin.
Cream butter and sugar. Add eggs one at a time with a spoonful of flour mixture. Add vanilla and yogurt and stir well. Sift in dry ingredients and stir in zucchini.
Pour into tin, and sprinkle with chocolate pieces if desired.
Bake at 170C for 45 minutes.

Rachael Ray's programme today used grated courgette's and a couple of eggs and a little flour to make fritters. . she then topped them with pizza type toppings and some grated cheese, under the grill, and the result was vegetable 'pizza's' that she said kids would love.
They can also be used as some of the veges in chow chow, piccalilli and other mustard pickles. .
Add about a cup full of grated courgette's to a bran muffin recipe for extra goodness and lovely moist muffins. . a little extra flour and baking powder may be needed. . these can be frozen too.

For the freezer I fry up some onion then add chopped zucchini and skinned chopped tomato and simmer for ten minutes. Once cool it gets bagged up in portion sizes and frozen. Great for pasta, a side vege for chops & steaks, added as a layer in spag bol or lasagne etc...

thanks for the recipes! have just finished making the courgette chutney from the NZ Gardner - yummy! ! ! nice and sweet even miss 10 likes it and it makes heaps!
