I made a nice coconut berry slice for christmas. 2 egg whilte, 3/4 cup shredded coconut, 3/4 cup desiccated coconut 1/3 cup castor sugar, 2 ts gellitine, 1/4 cup water
Beat eggs lightly, stir in coconut and sugar and bake about 15 mins (180) cool sprinkle gellitine over water which is standing in a heatproof bowl with boiling water stir until desolved and cool Beat500gmcream cheese. another 1/2 cup sugar then add 1 tsp vanilla and 300gm cream. add to gellitine. When base cools, sprinkle over raspberries, spreed with cream cheese filling and crush more raspberries to put on top. skewer to get marble effect.
It sound very complicated but it is really easy.

coconut berryslice sounds lovely but its not dairy free with creamcheese in it
