Sounds like Demura and Demarara are the same product.Wikipedia says:
"Natural brown sugar is brown sugar made by partially refining sugar cane extract, whereas most brown sugar is made by adding molasses to fully refined sugar.
Golden coloured natural brown sugar is produced by extracting the juice from sugar cane, heating it to evaporate water and crystallise the sugar, then spinning in a centrifuge to remove some impurities and further dry the sugar. It is commonly used in baking and to sweeten beverages such as coffee and tea.In the United Kingdom, this sugar is typically sold as demerara sugar, after the Demerara colony in Guyana."
That sounds like raw in that there is no mention of the acids used in refining white sugar. You could ask the Chelsea sugar people (www.chelsea.co.nz) - they would be able to provide an expert answer.

I'm inclined to agree with uke17.I've never heard of demura, so looked it up too, and have found recipes where they start talking about demerara, and half-way change to demura.Demerara is darker and has more molasses than raw brown sugar.

from http://www.chelsea.co.nz/
"Raw Sugar

This natural granulated sugar is also used as a sweetener for coffee or in baking and cooking where it improves the flavour and colour of the end result.
Raw sugar can be used to replace refined white sugar in most recipes except those such as meringues, which require only the sweetness of the sugar with no added colour or flavours."

"Demerara Sugar.Demerara (pronounced Dem-err-rar-rar) sugar is a rare and exotic sugar sourced from plantations in the Equatorial tropics. The fine golden crystals are a coffee connoisseur’s dream. Demerara creates tantilising toppings for delicacies like crème brulee or caramilsed grilled fruit. It also enhances the natural sweetness of grilled tomatoes."

Hope that helps.:-))

Yup, the material quoted by 245am is from Chelsea, but it is just marketing that tells you what the sugar is like, but does not tell you how the sugar is made, or if it can be considered "raw".Hence suggestion to ask them directly.

I've never heard of demura sugar, but raw sugar is more like "coffee crystals sugar" but finer.Demarara sugar is soft, dark brown sugar. No idea how it is made.
