This is excellent:
100gms margarine 2 cups flour, 1 small cup sugar 2 eggs 2 tsp cream of tartar 2 tsp baking soda 1 cup coconut 1 cup sultanas Milk to make a soft batter
Whizzed everything except sultanas, then folded those through. 200°C for about 12-15 minutes. Made 36 cupcakes
For other flavours, add chocolate chips, cocoa, chopped nuts, ground almonds, other dried fruit, etc. , leave out sultana's, etc.
