Creamy Pumpkin and Bacon Soup

There you'll find several pumpkin soup recipes with bacon in them; however whenever I think 'pumpkin soup' my first thought is Kumara, Pumpkin and Peanut Soup - a very easy to make and very tasty/yummy soup - you can find that recipe at:-

My favourite recipe is purplegonnas roasted pumpkin, garlic and bacon one. I like the intense flavour which i put down to the roasting of the pumpkin and heaps of garlic which makes it sweeter. Love it with a dollop of sour cream and a sprinkle of parsley and warm crusty bread. Its on the page of the link above 245sam has posted for you, every winter it gets great raves on the M/B.

This is one that I got out a recipe+ magazine, unfortunately I lost the magazine, but this is what I can remember and have been told it tasted the same.
Curried pumpkin soup
2xonions finely diced
2-4 garlic cloves crushed
3 bacon slices, diced
100g mushrooms diced
2 tsp mild curry (I used 1/4 tsp for a very mild flavour)
600g diced pumpkin
4c vege stock
s & p to taste
1/4c cream
saute onion and garlic in butter, add bacon and cook 1-2min, add curry and pumpkin, cook 1-2 min, add stock, bring to boil, simmer, after 10 min add mushrooms, once pumpkin soft blend together with stick blender and add cream, do not reboil. season to taste.
