Does anyone have an easy recipe they could share please. I've seen recipes in the past with cheese and sultanas added but I don't have the recipe.

Grated carrot, chopped spring onions, sultanas & walnuts. Add some toasted sesame seeds and mix all together. Dress by making an oil and vinegar dressing adding a little sesame oil with the olive oil.

Grated carrots, chopped pieces of orange (all pith and seeds removed) some raisins, sunflower seeds and coconut thread - and then use freshly squeezed orange juice as a dressing. It's nice when made ahead (a couple of hours - although not essential), as the carrot takes on the orange flavour when it's been left in the juice for a while.

Carrot and orange salad
Ingredients 2 carrots, grated 2 oranges 2 spring onions, finely sliced 1/4 cup sultanas 1/4 cup sunflower seeds, toasted
Cooking directions
Place grated carrot in a bowl. Peel skin from the oranges and gently squeeze a little orange juice into the carrot. This will be the dressing for the salad. Chop the oranges finely and add them to the bowl. Add spring onions, sultanas and sunflower seeds. Mix well.
