Hubby once made a carrot salad that had garlic and peanuts in it does this ring a bell with anyone dont know where we got the recipe from cheers

peanuts can be boiled or roasted in a hot oven for 6/7 minutes .

I have been making this for years, enjoy.
CARROT AND PEANUT SALAD
4 cups grated carrot 2/3 cup salted peanuts 1 1/2 cups grated tasty cheddar cheese 1 cup finely chopped celery ½ cup chopped parsley 2 cloves of crushed garlic 4 tabsp vegetable oil-soya will do 2 tabsp cider vinegar or lemon juice. I always use lemon.
Lightly combine all ingredients. That is the given recipe but I ignore quantities and add cheese, parsley and peanuts till it looks right. I also omitgarlic and celery ifI don’t have them.For party I added spring onion.Keep some peanuts and parsley to sprinkle on top.
