Went to Robert Harris in Tauranga today and had Wellington Slice which tastes like Chocolate Crackle with caramel through the middle. Does anyone have the recipe? ? ?

cactus7, was the slice made with rice bubbles/ricies or with cornflakes? Somewhere amongst my collection I have a recipe for both options. :-))

CHOCOLATE CARAMEL CRUNCH
Base:
8 oz Kremelta (melted)
4 cups cornflakes
1 cup coconut
1 cup icing sugar
3 tbsp cocoa

Pour the Kremelta over the dry ingredients and mix, then spread half of the mixture into a sponge roll tin and place in the refrigerator. When set spread with the cooled

Filling:
½ x 395g can sweetened condensed milk
1 tsp vanilla essence
¼ cup brown sugar
57g (2oz) butter
2 tbsp golden syrup

Place all the ingredients in a pan and boil for 1 minute, stirring constantly.
Top the filling with the remainder of base mixture and set it in the refrigerator.
Cut before it sets too hard, then return it to the refrigerator to set properly - if it is left to set completely before cutting, it goes really hard and breaks up rather than cutting into nice little (or big) squares – “don't make the pieces too big because it is really sweet and rich” – Pam. :-))
