What to do with too many telegraphy cucumbers....?

This is our first year using a tunnel house and have too many telegraph cucumbers coming ready all at the same time.Does anyone have a good relish/chutney recipe or similar...?Don't want them to go to waste...

lol @ telegraphy!. I think theres only so much relish or chutney you can make. If you literally have loads and you can spare some you would get seriously HUGE good karma if you would like to drop off some at your local food bank. The cupboards are taking a bashing as many families are struggling.

Here's another thought for you diy-bloke, not a relish/chutney, but something you may not have thought of or tried - cucumber as a hot vegetable - a nice and different way of using cucumber which is usually served as a cold / salad vegetable.....

HOT CUCUMBER
2 cucumbers, peeled – optional if telegraph/Lebanese cucumbers
2 onions, sliced
1 tsp sugar
2 cups water
25g butter
2 tbsp flour
¼ cup milk
salt and pepper

Cut the cucumbers into 1cm thick slices.Put both the cucumber and the onions into a saucepan with the sugar and water.Boil gently until the onion is soft.Drain, reserving the cooking liquid, and keep warm.
Melt the butter in a saucepan.When sizzling, stir in the flour and cook for 1-2 minutes.Add 1 cup of the reserved cooking liquid and the milk.Cook, stirring steadily until thick.Season well.Arrange the cucumber and onion in a dish, pour over the hot sauce and serve hot.
Serves 4-5.:-))

Same here. Have made two batches of Cucumber and pineapple pickle, was so yummy. First bottling done in years. Use the search on the left. Used 5 cucs per batch I did

bread and butter cumbers!!mmMmm just buy it here from a lady that makes it and its a must on crackers with cheese!
