raspberry jam and whipped cream roulade 4 eggs-room temp half cup caster sugar half cup self raising flour 300ml cream half cup raspberry jam icing sugar to dust preheat oven to 200C.line a lg tin 25x35 cm sponge roll tin with non stick paper, trim peper so its even with the sides and no overhang. beat eggs and sugar until pale and creamy, sift flour, fold into egg mixture, spread into tin, bake 7-8 mins until pale golden and the cake is pulling away from sides of the tin.turn out onto a fresh sheet of baking paper, cool completely.lightly score a line with a serrated knife,2 cm from one of the long edges of the cake-this will help with rolling. whip cream until thick, spread jam evenly over cake and cover with cream,(you may not use all the cream).using baking paper, roll the roulade towards you, starting with the scored-edge side, keep the roll tight and round. dust with icing sugar and serve with extra cream if desired. i havent made it-yet,but it looks beautiful in the book.
