Put the ripe bananas in the freezer & use them as needed.I always keep a supply in the freezer.

Soak ½ cup rolled oats in ½ cup milk for 5 mins Melt 125g butter, add 1 egg, beat lightly. Mix into the oat mixture. Stir in ¼cup sugar and 1cup mashed banana. Add 1cup flour, 2tsp baking powder, ½tsp baking soda,¼tsp salt and ¼tsp cinnamon previously sifted. Stir only enough to moisten ingredients. bake 190C for 15-20 mins, makes 8-12 muffins
