Does anyone have a recipe for mock raspberry jam made with ripe tomatoes? It uses raspberry cordial which is added at the end. I have lost my recipe and can't find one in the recipe sections.

Mock Raspberry Jam
4pounds tomatoes, 3 pounds sugar, juice from 1 lemon, 1/2 bottle raspberry essence (may need to let your taste buds guide you with raspberry cordial) ... skin tomatoes & cut up fairly fine; add sugar & lemon juice, and boil gently for about 2 hours. Test for setting & when ready, add rasp. ess.

Look Tomato Jam
3kg tomatos - 1. 5kg Sugar - 4 sachets of 2L (or 8 sachets 1L) Hansells Vitafresh-Raspberry Flavour - 1 packet King Jam Setting Mix. . Remove tomato skins and cores Not seeds and cut into small pieces. . bring to boil and cook till soft. . Add Jam setting mix and stir till dissolved. . Add sugar and boil for 15 mins. . Add Vitafresh- stir to dissolve and boil further 5 minutes. . Makes approx 2. 5 litres of jam. .
