Melting chocolate for dipping

whats the easier way to do it without it setting real quick?

Bring water to boil in a saucepan and take it OFF the heat.Put a tight-fitting bowl containing the chocolate on top, without letting the bowl touch the water.Stir the chocolate till melted (3 to 4 mins).

If the chocolate starts to thicken, take the bowl off, reboil the water and repeat the process.Do not leave the water simmering under the bowl (chocolate will go lumpy), and don't let water drip into the chocolate.

a tablespoon of Kremelta (vegetable fat) or a bitof oil is also a good trick
