I quite often make a roast vege salad and in the last 10 mins of cooking add frozen spinach. When cooked I toss mint sauce or mint jelly through it. So good.

This is nice if you like a bit of curry.Came from here not sure who posted it. Dressing 2 tsp curry powder,cup oil, 2 tsp vinegar,tsp sugar, 1 crushed garlic clove. Mix dressing well and pour over hot or cold roast vegs.
