Anzac, used Edmond cook book, underwhelmed.

It could be that they changed the recipe.

I've got an older book as well as a newer one and the ingredients are different.

125g (4oz) flour
150g (6oz) sugar
1 Cup rolled oats
1 Cup coconut
100gm (3oz) butter
1 TBLSP Golden Syrup
1/2 Teasp Bicarb Soda
2 TBLSP Boiling Water

Mix flour, coconut, sugar, oats.

Melt butter and G. syrup.

Dissolve Bicarb in water and add to butter and syrup mixture.

Make a well in flour mixture and stir in liquid.

Place in spoonfuls on greased trays. Bake 15-20 mins @ 180 Degrees Celcius (350F)

I leave out the coconut (not because I don't like coconut), but it makes a flatter, chewy-in-the centre Anzac.

I use this one ...

Anzac Biscuits

1 cup rolled oats (1/2 reg & 1/2 wholegrain is nice)
1 cup plain flour
1 cup sugar (I reduce this to 3/4C)
1 cup coconut (sometimes I use coconut thread)
125g butter
2 tablespoon golden syrup
2 tablespoons boiling water
1 teaspoon baking soda

Mix dry ingredients, melt butter & syrup together, dissolve soda in boiling water, then mix altogether.
Place balls of mixture onto a lined tray, flatten slightly and bake at 160C for 15-20 minutes or until golden.

helen490 - keep the mixture on the 'moist' side and don't bake them too hot or too long. Too hot & the oats & coconut don't cook through properly ... too long & the biscuits will become crisp.

I actually complained to Edmonds about the Anzac recipe - they come out like hard little bullets! They never replied though.

I was disappointed with the amount I got from the Edmonds recipe - made a double batch and got about 30 (not large either) - think the recipe said makes 25

I use this recipe, add coconut... and instead of baking it as a bar with filling (though it's good! ), roll the oat mixture into balls and cook as biscuits. It is really good!

I know what you mean about the edmonds... I always think I've done something wrong when I make them, but I'm sure it's the recipe. Doesn't seem to be enough liquid! ?

i did a double batch of these last night and wow they are divine!
i had my oven on fan bake so i lowered the temp to 140 ... yum . . family loved them!
I served them on top on ice cream :)

winnie15 - I'm really pleased you like the recipe.
There's not alot of difference between most anzac biscuit recipes really ... and yet some work for one person but not for another.
This one works for me (and apparently accroul too) & I'm happy you had success!
