Thai Beef Salad (Yam Neua Yang Nahm Toke)

serves 4

350g lean beef sirloin, rump or fillet
2 tab fish sauce
4 tab lime juice
1 tsp sugar
¼ tsp roasted chilli powder
3 shallots, finely sliced
lettuce leaves
⅓ c coriander leaves, roughly chopped
⅓ c mint leaves, roughly chopped

Mix fish sauce, lime juice, sugar and chilli powder, add shallots.

Line a serving plate with lettuce leaves.

Sprinkle beef with salt and pepper and grill over high heat to rare. Slice crosswise into strips and add to dressing, combine well. Check seasoning and adjust if necessary. Spoon over lettuce leaves, sprinkle coriander and mint on top to serve.

Thai Beef & Noodle Salad

Salad
2 tablespoons honey
1 tablespoon fish sauce
1 small Thai red chilli, finely chopped
600g piece beef eye fillet
1 tablespoon vegetable oil
2 Lebanese cucumbers, seeded, sliced thinly
1 cup (80g) bean sprouts
1 small red onion, thinly sliced
1 cup coriander leaves
1 cup mint leaves
6 kaffir lime leaves, sliced thinly
200g crisp fried noodles (either buy a packet or deep-fry fresh egg noddles)

Hot and sour dressing
1/3 cup lime juice
2 tablespoons fish sauce
2 tablespoons honey
1 tablespoon finely sliced fresh lemongrass
3 Thai red chillies, sliced thinly

Combine honey, fish sauce and chilli in a large bowl. Add beef and turn to coat; cover, refrigerate at least 30 minutes to marinate. Make hot and sour dressing.

Hot and sour dressing Combine ingredients in screw-top jar; shake well.

Brush grill plate or frying pan with the oil and cook beef until browned and cooked as desired. Cover; stand in a warm place 10 minutes. Slice beef thinly.

Meanwhile, combine cucumber, sprouts, onion, coriander, mint and lime leaves in large bowl.

If using fresh egg noodles, heat an extra 2 cups of vegetable oil in a wok or large saucepan; deep-fry noodles, in batches, until puffed and browned lightly. Drain on absorbent paper.

Add beef and dressing to salad in bowl; toss gently to combine. Divide noodles among serving plates; top with beef salad.
