Add finely diced tomato paste. Add the chopped coriander stems.

Cook the bubbling mix till it is quite a thick paste. Keep stirring.

Add the mussels in the spice mixture, stir in well making sure the mussels are well coated with the spice mixture to steam. Stir the pan frequently.

After about 3-4 minutes add the fennel powder and chopped coriander leaves.

Love your spelling Sherri (winks not growls! )- I wish developing muscles was as easy as eating mussels. Actually I don't like doing either!

my friends husband would make this amazingly delicious Fijian dish. Basically cooked in curry spices and coconut cream, in their scubbed shell/debearded and cooked in the oven.

However MY husband loves my basic mussel chowder.

Fry onion/garlic in butter, make a roux by adding flour until it's frothy, add milk (and cream), finely chopped parsley and chives and lastly warm through your already steamed mussels. Like I said, basic, but it swears it's brilliant ... and who am I to argue? !

Muscles? You have two bags of Human flesh you intend to make fritters from... Shall we refer to you as Hannibal ?
