Cinnamon Parfait To make this parfait (Icecream) you don't need an icecream maker. 4 egg yolks, 100g honey, 50ml milk, 2 tablespoons cinnamon, 350ml cream, 4 egg whites, 1 pinch salt, 25g sugar - Heat up egg yolks, honey and milk in a bain marie till setting but don't cook the ingredients. Cool them down in cold water. Even add some ice to the water if available. Add cinnamon and whipped cream. Whipp egg whites, salt and sugar to stiff consistency and add carefully (folding) to the cold mixture. Freeze in a container for about 4 – 5 hours. If no honey is available add sugar instead.
